Butter Crackers

Ingredients

  • 120g Salted Butter - Softened ( Not Melted )
  • 2 Egg Whites
  • 2 1/4 Cups Almond Flour
  • Salt to taste

Directions

  1. Pre heat oven to 180c
  2. In a large bowl, combine butter and almond flour using an electric hand mixer on low/medium speed.
  3. Add the egg whites and a pinch of salt.
  4. Continue mixing on low speed until the mixture is uniform and forms a smooth dough.
  5. Roll the dough between 2 pieces of baking paper until it reaches 1/8 inch thickness.
  6. Peel away the top layer of baking paper and transfer bottom layer with rolled out dough, onto a baking sheet.
  7. Using a small knife or pizza cutter, score the dough into squares.
  8. Sprinkle the dough with salt.
  9. Bake for 10 - 15 minutes or until crackers have turned a light brown.
  10. Carefully remove from oven, and allow to cool before gently breaking them apart along the scores.
