Slow Cooker Mongolian Beef

Ingredients

  • 1kg skirt steak, cut into thin strips

  • 1/4 cup (30g) arrowroot flout

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1 tbsps sesame oil

  • 2 cloves garlic, minced

  • 1/2 tsp grated fresh ginger

  • 3/4 cup (185 ml) soy sauce

  • 3/4 cup (185ml vegetable stock)

  • 3/4 cup (120g) brown sugar

  • 3 carrots, grated

  • 4 spring onions, sliced diagonally

Directions

  1. Add the steak, flour, salt and pepper to a large bowl. Toss to coat.

  2. Add the sesame oil, garlic, ginger, soy sauce, stock, brown sugar, carrots and half the spring onions to the slow cooker. Stir to combine

  3. Add the steak slices and stir through to combine

  4. Cook on high for 3 hours or low for 5 hours or until steak is cooked through and tender.

  5. Serve over rice or noodles, garnished with remaining spring onion slices.
