Mexican Casserole

Ingredients

  • 1kg Mince
  • 2 Cans Tomatoes - Drained
  • 230g Mozzarella
  • 1 Medium Onion
  • 150ml Sour Cream
  • 455g Cream Cheese
  • 4 Teaspoons Taco Seasoning
  • 565g Spinach - Drained 

Directions

  1. Preheat oven to 200.
  2. Brown onion and mince in frypan.
  3. Microwave spinach until defrosted, and get out as much moisture as possible.
  4. Add spinach, tomatoes, sour cream, cream cheese and taco seasoning to frypan. Cook unitl cream cheese has melted.
  5. Turn off the heat, and add mozzarella to the frypan. Mix well.
  6. Put mixture into casserole dish and cook for 45 minutes

Notes:

Instead of 2 cans tomatoes --

Add 2 Tbs of tomato paste, and if needed, 1/4 cup water.
