Mexican Casserole
Ingredients
- 1kg Mince
- 2 Cans Tomatoes - Drained
- 230g Mozzarella
- 1 Medium Onion
- 150ml Sour Cream
- 455g Cream Cheese
- 4 Teaspoons Taco Seasoning
- 565g Spinach - Drained
Directions
- Preheat oven to 200.
- Brown onion and mince in frypan.
- Microwave spinach until defrosted, and get out as much moisture as possible.
- Add spinach, tomatoes, sour cream, cream cheese and taco seasoning to frypan. Cook unitl cream cheese has melted.
- Turn off the heat, and add mozzarella to the frypan. Mix well.
- Put mixture into casserole dish and cook for 45 minutes
Notes:
Instead of 2 cans tomatoes --
Add 2 Tbs of tomato paste, and if needed, 1/4 cup water.
