Curried Sausages

Ingredients

  • 8 Sausages
  • 2 TBSP oil
  • 1/2 Onion
  • 1 TSP Garlic
  • 1 TBSP curry powder
  • 1 cup beef stock
  • 2TBSP Tomato paste
  • 1/2 cup cream
  • 50g baby spinach leaves

Directions

  1. In a frypan, heat oil over a medium heat. Add sausages, poke with a fork to allow oils to escape. Turn reguarly, until just done. Remove from pan and set aside. Cut into bite sized pieces
  2. In the same pan, add the remaining oil, garlic and sliced onions. Saute until translucent
  3. Add the curry powder to the pan and cook for 1 minute
  4. Add all cooked ingredients to the slow cooker, along with beef stock, cream and tomato paste. Stir well to combine.
  5. Cook on auto for a minium of 2 hours - longer if you can
  6. Add the trimmed baby spinach just before serving
