Vegetarian Pasta

Ingredients

  • 1 Onion
  • 3 Cloves Garlic
  • 2 TBSP Tomato Paste
  • Punnet Cherry Tomatoes - Halved
  • 2.5 Cups Vegetable Broth
  • 2.5 Cups Almond/Coconut Milk
  • 16oz Pasta
  • Spinach Packet
  • 1/3 Cup Nutritional Yeast

Directions

  1. Fry diced onion in pan with garlic (3 Tsp) and Tomato Paste (2 TBSP)
  2. Add Cherry tomatoes and cook up together.
  3. Add salt and pepper to taste.
  4. Add Vegetable Broth (2.5C) and milk (2.5C).
  5. Add Pasta.
  6. Simmer 10 minutes with the lid on, add spinach and cook down.
  7. Add yeast (1/3c) and cook through.
