Vegetarian Pasta
Ingredients
- 1 Onion
- 3 Cloves Garlic
- 2 TBSP Tomato Paste
- Punnet Cherry Tomatoes - Halved
- 2.5 Cups Vegetable Broth
- 2.5 Cups Almond/Coconut Milk
- 16oz Pasta
- Spinach Packet
- 1/3 Cup Nutritional Yeast
Directions
- Fry diced onion in pan with garlic (3 Tsp) and Tomato Paste (2 TBSP)
- Add Cherry tomatoes and cook up together.
- Add salt and pepper to taste.
- Add Vegetable Broth (2.5C) and milk (2.5C).
- Add Pasta.
- Simmer 10 minutes with the lid on, add spinach and cook down.
- Add yeast (1/3c) and cook through.
