Cauliflower Mac and Cheese

Ingredients

  • 1 Tbsp unsalted butter, softened
  • 1 Large Cauliflower, cut into small thin florets
  • 250ml Double Cream
  • 75g Cream Cheese, cubed
  • 1 Tsp Dijon Mustard
  • 225g Cheddar, grated - divided
  • 3-4 Thyme Sprigs
  • 1 Small handful basil, chopped
  • Salt
  • Pepper

Directions

  1. Preheat oven to 170 Degrees. Grease a 20cm baking dish with the butter.
  2. Cook the cauliflower in a large saucepan of salted, boiling water unil just tender to the tip of a knife. About 4 minutes.
  3. Drain well and let cool briefly before patting dry with paper towel. Arrange the cauliflower in the baking dish.
  4. Bring the cream to a simmer in a saucepan set over a moderate heat. Once simmering, add the cream cheese, mustard, and about three quarters (175g) of the cheddar. Whisking well until the cheese has melted. About 2-3 minutes.
  5. Remove from the heat and season to taste with salt and pepper. Stir in the herbs.
  6. Pour the mixture over theĀ  cauliflower and top with the remaining cheddar
  7. Bake until golden-brown and bubbling aty the edges, about 20-25 minutes. Remove from the overn and let stand for a few minutes before serving.
