Special Fried Rice - IP

Ingredients

  • 1 Tbsp Oil
  • 2 Eggs Beaten
  • 2 Cloves Minced Garlic
  • 1 Medium Onion Sliced

 

  • 1 Cup of Carrots Cut To Match Sticks
  • 2 Cups Cooked & Diced Chicken, Bacon or Ham
  • 1/4 Cup Soy Sauce
  • 500ml Chicken Stock
  • 2 Cups Washed Jasmine or Basmati Rice (uncooked)
  • 1 Pinch Sea Salt

 

  • 1 Cup Frosen Preffered Vegetables
  • 4 Lengths Chopped Spring Onions/ Shallots

Directions

  1. Heat up pot on saute.
  2. Lid open. Place the oil in the bowl. Scramble the eggs in the pot for 1 minute, then remove.
  3. Pop the onion and garlic in the bowl and saute 2 minutes or until transluscent, then hit cancel.
  4. Add the chicken and ham, carrots, rice soy sauce, chicken stock and eggs back in the bowl and mix well, making sure the liquid covers the rice.
  5. Put the lid on and set the valce to seal.
  6. Pressure cook for 10 minutes - quick release
  7. Remove lid and while still hot, carefully stir in frozen veggies and spring onions.
