Peanut Chicken - IP

Ingredients

  • 700g Chicken Breast

  • 3 Garlic Cloves

  • 1 Tbsp Ginger

  • 1 Tsp Oil

  • 370ml Coconut Milk

  • 3 Tbsp Soy Sauce

  • 3 Tbsp Honey

  • 2 Tbsp Fresh Lime Juice

  • 1 Tbsp Chilli Garlic Paste

  • 1/2 Cup Peanut Butter

  • Optional: 1 Tbsp lemongrass

Directions

  1. Cut the chicken into 1 inch cubes, sprinkle with salt.
  2. Set Instant Pot to saute function, saute garlic and ginger in a tsp of oil for 1-2 minutes or until fragrant. (Add lemongrass if using)
  3. Stir the can of coconut milk with a fork, then add 1 cup of coconut milk into pot.
  4. Stir in the soy sauce, honey, lime, chilli paste and the chicken - Everything except the peanut butter.
  5. Drop the peanut butter in spoonfuls over top of the chicken - don ot stir in.
  6. Set to high pressure for 8 minutes. Naturally release. (If using thigh meat cook for 12 minutes).
  7. Once done cooking, taste the sauce. Adjust salt, lime, sweeteness according to taste. Sauce will thicken slightly as it cools.
