Cheesy Broccoli Cauliflower Soup - IP
Ingredients
- 2 Tbsp Olive Oil
- 1 Medium Onion, finely diced
- 2 Cups Diced Carrots
- 3 Cloves Garlic
- 4 Cups Vegetable Stock
- 3 Cups Broccoli Florets
- 3 Cups Cauliflower Florets
- 1 Tsp Dijon Mustard
- 1/2 Tsp Ground Paprika
- 1/4 Tsp Ground Turmeric
- 3 Cups Sharp Cheddar Cheese
- Salt and pepper to taste
Directions
- Saute olive oil. Once oil is hot, stir in onion and carrots and cook about 2-3 minutes, or until onion is translucent.
- Stir in the garlic andf cook for 1 minute. Stir in the broth.
- Add the broccoli and cauliflower to the pot, put on the lid.
- Pressure cook for 8 minutes - Quick release, and turn off.
- Add in the paprika, turmeric and dijon. Stir fully.
- Add the cheese and stir, mixing until fully melted
- Season to taste.
- Use an immersion blender to make the soup creamy

Put salt and pepper in when the cauli and broccoli go in. 3 teaspoons of salt, and 8 grinds of pepper
