Cheesy Broccoli Cauliflower Soup - IP

Ingredients

  • 2 Tbsp Olive Oil
  • 1 Medium Onion, finely diced
  • 2 Cups Diced Carrots
  • 3 Cloves Garlic
  • 4 Cups Vegetable Stock
  • 3 Cups Broccoli Florets
  • 3 Cups Cauliflower Florets
  • 1 Tsp Dijon Mustard
  • 1/2 Tsp Ground Paprika
  • 1/4 Tsp Ground Turmeric
  • 3 Cups Sharp Cheddar Cheese
  • Salt and pepper to taste

Directions

  1. Saute olive oil. Once oil is hot, stir in onion and carrots and cook about 2-3 minutes, or until onion is translucent.
  2. Stir in the garlic andf cook for 1 minute. Stir in the broth.
  3. Add the broccoli and cauliflower to the pot, put on the lid.
  4. Pressure cook for 8 minutes - Quick release, and turn off.
  5. Add in the paprika, turmeric and dijon. Stir fully.
  6. Add the cheese and stir, mixing until fully melted
  7. Season to taste.
  8. Use an immersion blender to make the soup creamy

Put salt and pepper in when the cauli and broccoli go in. 3 teaspoons of salt, and 8 grinds of pepper
