Keto Tuna Casserole
Ingredients
- 1 large can of tuna - drained
- 6 cups fresh broccoli
- 227g cream cheese
- 1 small onion - diced
- 1 cup shredded cheddar cheese
- 2 tbsp butter
- 1/2 tsp garlic powder
- salt and pepper - to taste
Directions
- Preheat oven to 180
- Place cream cheese into mixing bowl and microwave about 30 seconds or until softened.
- Add tuna to the bowl and set aside
- Over medium heat, melt the butter in a large pan
- Cook the diced onion until softened, let cool and add to tuna
- Add brocolli and cook until softened and starting to brown in the pan. Season with salt, pepper and garlic powder
- Add the mayo to the tuna mixture and stir until all ingredients combined. Add salt and pepper to taste
- Spread the tuna evenly over the broccoli
- Sprinkle the cheddar cheese on top
- bake for 20 minutes until the cheese is melted
Notes:
If we have zucchini, dice into large chunks and cook with the broccoli
