Keto Tuna Casserole

Ingredients

  • 1 large can of tuna - drained
  • 6 cups fresh broccoli
  • 227g cream cheese
  • 1 small onion - diced
  • 1 cup shredded cheddar cheese
  • 2 tbsp butter
  • 1/2 tsp garlic powder 
  • salt and pepper - to taste

Directions

  1. Preheat oven to 180
  2. Place cream cheese into mixing bowl and microwave about 30 seconds or until softened.
  3. Add tuna to the bowl and set aside
  4. Over medium heat, melt the butter in a large pan
  5. Cook the diced onion until softened, let cool and add to tuna
  6. Add brocolli and cook until softened and starting to brown in the pan. Season with salt, pepper and garlic powder
  7. Add the mayo to the tuna mixture and stir until all ingredients combined. Add salt and pepper to taste
  8. Spread the tuna evenly over the broccoli
  9. Sprinkle the cheddar cheese on top
  10. bake for 20 minutes until the cheese is melted

Notes:

If we have zucchini, dice into large chunks and cook with the broccoli
