Chicken and Leek Rissoles
Ingredients
- 500g Chicken Mince
- 1 Tbsp Chia Seeds
- 1 Leek
- 1 Tsp Garlic
- 2 Tsp Butter
- Salt
- Pepper
Directions
- Halve the leek lengthways and slice finely.
- Melt the butter in a saucepan and add the leek and garlic. Cook until soft. Allow to cool
- Add the chicken mince, chia seeds, cooked leek to a large bowl and mix well. Salt and pepper to taste.
- Refrigerate mixture for at least 20 minutes.
- Oil your hands. Make into dessert spoon sized rissoles.
- Cook on a medium heat in the frypan for 20 minutes, or until cooked through.
