Chicken and Leek Rissoles

Ingredients

  • 500g Chicken Mince
  • 1 Tbsp Chia Seeds
  • 1 Leek
  • 1 Tsp Garlic
  • 2 Tsp Butter
  • Salt
  • Pepper

Directions

  1. Halve the leek lengthways and slice finely.
  2. Melt the butter in a saucepan and add the leek and garlic. Cook until soft. Allow to cool
  3. Add the chicken mince, chia seeds, cooked leek to a large bowl and mix well. Salt and pepper to taste.
  4. Refrigerate mixture for at least 20 minutes.
  5. Oil your hands. Make into dessert spoon sized rissoles.
  6. Cook on a medium heat in the frypan for 20 minutes, or until cooked through.
